The unedited reality behind elite VIP dining on luxury cruise lines...

I remember it like it was yesterday. It was the start of my next contract—Sign-In Day. For anyone who has ever worked onboard a luxury cruise ship, you know that the first day is easily one of the most stressful, exhausting experiences a crew member can go through. For me, things were slightly easier because I had already completed multiple contracts; I had become completely immune to the chaotic energy of joining a new ship. Still, you always step onboard expecting to see a few familiar faces or supervisors. But this time, it was impossible. Every single face was a stranger, and the entire restaurant management was brand new to me. Viking Ocean has a massive, rapidly growing fleet, so getting assigned to a ship where you don't know a single soul is a reality you have to face.

Nikola On Board Crew

My journey began when I embarked in Barcelona. To give you some insider context, almost every premium cruise line provides their crew with a hotel stay for the night before embarkation, along with a fully paid airline ticket. Honestly, I felt fantastic. Barcelona is an absolutely breathtaking city, my flight had been smoother than silk, and I managed to check into the hotel early. I took a quick shower and immediately went out to explore the streets of Barcelona, enjoying one full day of freedom before the reality of the contract kicked in. It's worth noting that these massive ocean liners handle massive crew turnovers during these turnarounds—roughly 50 to 80 crew members sign off to go home, and the exact same number step onboard to kick off their demanding six-month contracts.

"The ocean has a way of stripping away the noise of the world, leaving only the truths you were running from."

When the moment arrived to finally step onboard the ship, I felt completely relaxed, primarily because I knew the rigorous standards of Viking Ocean Cruises inside out. But as I mentioned, the catch was that I didn't know a single supervisor or manager in the entire restaurant department. In our world, that means only one thing: you have to prove yourself entirely from scratch, regardless of how incredible your performance and reviews were on your previous ships. As passengers notice when they cruise, a waiter has to be incredibly flexible. You have to immediately shift into fifth gear, even if your recent vacation had your brain comfortably resting in second gear. Right out of the gate on that first evening, they handed me Station 7 in the Main Dining Room—the infamous Captain's Table station.

To give you an insider look, only two crew members run this specific station. Usually, management only places two highly experienced, veteran waiters there—never a standard pairing of a main waiter and an assistant. The station is highly unique because it features the absolute best view on the ship, looking directly out at the stern with spectacular, panoramic ocean sunsets. It almost feels like you aren't in a busy dining room because the station is elegantly isolated by structural walls. The layout consists of the grand Captain’s Table itself, which seats a party of 15, plus two additional tables for a party of 8, and two intimate tables for couples. I was paired with an Assistant Waiter named Lulu from South Africa. When we first met, we exchanged a few tense, uncertain glances. But I told myself, 'There is no looking back. We are going to push as hard as we can.'

I secretly hoped our station wouldn't get completely slammed on the very first night. As we stood there giving each other worried looks while prepping the bread baskets, I made a managerial executive decision. I looked at Lulu and decided to give her total professional freedom. I told her, 'Act like you are the main waiter. Act like you are me. We work as one synchronized team, no matter what happens.' I saw her instantly relax, and she gave me the green light—which was an incredible sign. Ten minutes later, believe it or not, the entire station was completely full. The grand Captain's Table was packed with a lively party of 15. Trust me, just pouring water for 15 elite guests, popping open the first bottles of premium wine, and taking complex orders while trying to coordinate a flawless service is pure adrenaline. Our hands were shaking slightly because Lulu and I had never worked a single second together.

We tried our best to break the ice and entertain the guests, but everyone sat there completely silent and dead serious, which only fueled our anxiety. Somehow, we managed to serve the first appetizers and pour a variety of different wines. I looked at Lulu and whispered, 'There's no going back now.' I told her that the moment we dropped the plates down in front of the guests, we would look them in the eye and say in unison: 'We wish you a Bon Appétit!' The delivery was so perfectly timed and enthusiastic that the entire table burst into massive laughter. The guests were absolutely thrilled. We ran over to the other tables and repeated our signature 'We wish you a Bon Appétit!' even louder, and the entire station erupted into smiles. The interaction was magical. I started using my veteran skill to clear all 15 massive plates at the exact same time, while Lulu completely dominated the floor with her vibrant South African energy and sharp wit. The supervisors were standing in the distance, completely stunned by the atmosphere we created. Lulu and I took the ultimate victory in the dining room that night. Those guests bonded so deeply with us that despite having two complimentary specialty restaurants included in their cruise package, they refused to eat anywhere else. They came back to our station every single night. Those exact human moments are the reason I kept returning to the sea, contract after contract.
